Quante volte abbiamo provato una ricetta nuova e ci siamo accorti che il risultato non era come quello che ci saremmo aspettate? Bene, con questa ricetta di famiglia il risultato sarà garantito! Ti spiego subito da dove deriva questa mia apparente presunzione…
Spesso ci ritroviamo a cercare su google la ricetta perfetta ma nella maggior parte dei casi quel che manca è quel pizzico di fiducia perché non possiamo interagire per un consiglio o un chiarimento con l’autore della stessa.
La panna cotta piu’ buona che io abbia mai mangiato? Quella di mia suocera, senza ombra di dubbio! In questa ricetta nessun segreto: ti svelo esattamente la sua procedura e gli ingredienti che utilizza! Ho apportato soltanto una variante: l’aggiunta dell’anice stellato!
Quindi se sei un amante di questa spezia la ricetta che troverai in questo articolo ti conquisterà al primo colpo di cucchiaio! Era da giorni che avevo in mente un dolce all’anice! Il suo profumo mi avvolge, mi riporta indietro nel tempo. Chi non andava pazzo da bambino per le classiche caramelle lattescenti all’anice?
lE virtu’ dell’Anice stellato.
Per chi non lo sapesse l’anice stellato ha tantissime proprietà! Conosciuto anche come Illicium verum, Illicium anisatum L. è una spezia molto diffusa in tutto il mondo. Viene usato principalmente il pericarpo del frutto, quello che ha forma di stella. E’ un potente alleato contro tosse e bronchiti, stimolante dell’appetito e della produzione di latte materno, ideale per i disturbi del tratto gastroenterico.
LA RICETTA DI MIA SUOCERA: NONNA LUISA!
Non potendo invitare tutti a casa per assaggiare la sua panna cotta ho deciso di farla io e di condividere con te la sua speciale ricetta! Cosa dovrai procurarti nel frattempo? Iniziamo subito, ma intanto vai a comprare, sempre se non lo hai già in casa: panna fresca, latte fresco, zucchero semolato, anice stellato q.b., colla di pesce, caramello.
In Abruzzo abbiamo un difetto in cucina, cuciniamo per tipo 10 persone alla volta! Quindi sentiti libera di dimezzare la dose! Io in ogni caso parto da quella originale di nonna Lu’.
ingredienti
1 litro di panna fresca
200 ml di latte fresco
200 grammi di zucchero semolato o di canna
14 grammi di colla di pesce
anice stellato q.b. per guarnire ed insaporire la panna cotta
aroma all’anice a piacere (servirà a rendere piu’ intenso il sapore della panna cotta all’anice)
caramello per guarnire prima di servire.
come si fa la panna cotta di nonna Lu’? Il procedimento!
La prima cosa che faccio è quella di immergere i fogli di colla di pesce in acqua fredda. Rimarranno li’ fino a quando non si saranno ammorbiditi bene fino a prendere la tipica consistenza gelatinosa.
Nel contempo in una pentola antiaderente metto la panna, il latte, lo zucchero e qualche stella di anice, giro bene con la frusta e accendo la fiamma. Non porto subito a bollore, spengo leggermente prima.
A questo punto solitamente è già pronta la colla di pesce. La vado a strizzare e ad aggiungere a tutti gli altri ingredienti. In questa fase riaccendo la fiamma e porto a bollore mentre mescolo con la frusta in modo da esser sicura che la colla di pesce si sciolga per bene. Questo passaggio non durerà piu’ di 3/4 minuti.
Ora potrai aggiungere l’aroma all’anice (se preferisci che l’anice si senta effettivamente). Travasare la nostra panna cotta nello stampo o stampini e far addensare all’interno del frigorifero per 4/6 h. Prima di servire guarnire con una stellina di anice e del caramello.

A suon di errori (quando non utilizzavo la ricetta di mia suocera ovviamente) ho imparato che con la colla di pesce è sempre meglio abbondare che deficere (ma con questa ricetta non avrai sorprese)!
Se non sei sicuro di aver sciolto alla perfezione la colla di pesce allora prima di metterla nello stampo utilizza un colino!
La variante con lo zucchero di canna grezzo darà un colore piu’ scuro ed un sapore leggermente piu’ forte.
